Spicy Spam and Potato Stew Made with Fresh Potatoes
Potatoes are so delicious this season, aren’t they? I made a gochujang stew using fresh potatoes 🙂
Stew Ingredients- Potatoes 240g
- Onion 100g
- Spam 200g
- Green Onion 20g
- Red Chili Pepper 1 pc
- Dried Anchovy (for broth) 2 pcs
Seasoning- Soy Sauce 3 Tbsp
- Gochujang 1 Tbsp
- Minced Garlic 0.5 Tbsp
- Red Pepper Flakes 2 Tbsp
- Sugar 1 Tbsp
- Doenjang 0.5 Tbsp
- Soy Sauce 3 Tbsp
- Gochujang 1 Tbsp
- Minced Garlic 0.5 Tbsp
- Red Pepper Flakes 2 Tbsp

Cooking Instructions
Step 1
Prepare the ingredients for the stew. Measure out 200g of Spam, 1 red chili pepper, 20g of green onion, 100g of onion, and 240g of potatoes. Wash them thoroughly.
Step 2
For the delicious seasoning paste: combine 1 Tbsp Gochujang, 1 Tbsp sugar, 0.5 Tbsp minced garlic, 0.5 Tbsp Doenjang, 3 Tbsp soy sauce, and 2 Tbsp red pepper flakes in a small bowl. Mix well until fully combined. Adding a bit of Doenjang enhances the savory flavor.
Step 3
Peel the potatoes and onion, then cut them into approximately 2cm cubes. Cutting the potatoes into manageable sizes ensures even cooking.
Step 4
Open the Spam can and place the Spam into a zip-top bag. Lightly mash the Spam using a rolling pin or your hands. This helps release its flavor into the stew broth.
Step 5
Finely chop the red chili pepper. This will add a pleasant spiciness and vibrant color to the stew.
Step 6
In a pot, add water and the 2 pieces of dried anchovy (for broth). Simmer for 2-3 minutes to create a flavorful broth. Remove the anchovy after 3 minutes to prevent a bitter taste.
Step 7
Once the broth is simmering, add the cubed potatoes. Since potatoes take the longest to cook, add them first to ensure they are tender.
Step 8
When the potatoes begin to soften slightly, add the cubed onion to the pot and let it cook along with the potatoes.
Step 9
Add the mashed Spam to the stew, allowing it to meld with the potatoes and onions.
Step 10
Add 1 Tbsp of the prepared seasoning paste to the pot and stir well. Taste the broth and add more seasoning paste as needed, adjusting to your preference. It’s best to start with a smaller amount and add more to avoid making it too salty.
Step 11
Reduce the heat to low and let the stew simmer for about 20 minutes, stirring occasionally to prevent sticking. Cook until the potatoes are soft and the broth has thickened slightly. Once the potatoes are cooked, add the chopped green onion and simmer for another minute.
Step 12
Finally, garnish generously with the chopped red chili pepper. Your delicious and spicy Spam and Potato Gochujang Stew is ready to be enjoyed with a hot bowl of rice!
