  • Spam 60g: Dice into a size that provides a satisfying chew when mixed with rice.

Seasoning Ingredients
  • Oyster Sauce 1 Tbsp: Adds a rich umami flavor.
  • Chili Oil 2 Tbsp: Provides a spicy kick. Adjust the amount to your preference.
  • Black Pepper, a pinch: Enhances the overall flavor with a hint of spiciness.
  • Canola Oil, a little: Helps to cook the ingredients evenly without burning.

Cooking Instructions

Step 1

First, wash the eggplant thoroughly, pat it dry, and then slice it into strips about 5mm thick, perfect for frying. Dice the Spam into bite-sized cubes or mince it finely. Prepping the ingredients beforehand will save you time while cooking.

Step 2

Heat a pan over medium-high heat and add a little canola oil. Add the prepared eggplant and Spam, and begin to stir-fry. At this point, add the oyster sauce, chili oil, and black pepper. Mix well to ensure the ingredients are evenly coated with the seasonings. You’ll soon smell the fragrant aroma of the chili oil.

Step 3

Continue to stir-fry the ingredients over medium-high heat, using a spatula or chopsticks, making sure they don’t burn. Fry for about 2-3 minutes until the eggplant softens and the Spam releases its delicious fat. Stir-frying the ingredients like this beforehand will deepen the flavor of your fried rice.

Step 4

Add 1 serving of rice to the stir-fried ingredients. Using warm rice is recommended over cold rice, as it helps prevent clumping and results in fluffier fried rice. Break up the rice with your spatula as you mix, ensuring each grain is coated with the seasoning.

Step 5

Quickly stir-fry everything together until the ingredients and rice are well combined. Once the rice grains are separate and all ingredients are thoroughly mixed, your delicious Spam and Eggplant Fried Rice is ready! Serve it hot in a bowl and enjoy. For an extra touch, you can sprinkle some roasted seaweed flakes or sesame seeds on top.
