  • Cooking Time : Within 15 minutes

Ingredients

  • 1 can Spam (approx. 200g)
  • 1/4 stalk Green Onion
  • 2 Cheongyang Peppers (small, spicy Korean peppers)
  • 1-2 Tbsp Oyster Sauce (adjust to taste)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, rinse the Spam lightly under lukewarm water to remove excess grease. Then, dice it into bite-sized pieces (about 1cm cubes or strips). Finely mince the Cheongyang peppers. Removing the seeds will help control the spiciness.

Step 1

Step 2

Thinly slice the green onion, including both the white and green parts. This will add a wonderful aroma to your fried rice.

Step 2

Step 3

Heat 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced green onions and sauté them gently until fragrant, allowing the ‘green onion oil’ to infuse into the oil. This slow sautéing is key to releasing their flavor.

Step 3

Step 4

Once the green onions are fragrant, add the prepared Spam and minced Cheongyang peppers to the pan. Sprinkle with a pinch of black pepper. Increase the heat to high and stir-fry quickly until the Spam is golden brown and slightly crispy. (Garlic is optional; you can add a little minced garlic here if you like.)

Step 4

Step 5

Push the cooked Spam and vegetables to one side of the pan. Add one serving of cooked rice (about 200g). Drizzle 1-2 tablespoons of oyster sauce over the rice, adjusting the amount to your preference. Oyster sauce adds a rich umami flavor.

Step 5

Step 6

Break up any clumps of rice with your spatula and stir-fry everything together quickly over high heat, ensuring the sauce is evenly distributed. The goal is to coat each grain of rice without making it mushy.

Step 6

Step 7

Once perfectly fried, transfer the delicious Spam and Cheongyang pepper fried rice to a serving plate.

Step 7

Step 8

For an extra touch, top with a fried egg (sunny-side up or over easy is recommended). Breaking the yolk and mixing it into the rice adds a wonderfully creamy texture.

Step 8

Step 9

Enjoy your delicious Spam and Cheongyang pepper fried rice! The delightful spicy and savory flavors will fill your palate for a truly satisfying meal. Dig in and enjoy! 챱챱
