Ingredients

  • Yeol Ramen 2/3 pack
  • Soft Tofu 1/2 pack (approx. 150-200g)
  • 2 Tbsp minced green onion
  • 3 slices frozen thinly sliced pork belly
  • 2/3 Tbsp red pepper flakes
  • 1 tsp minced garlic
  • 350ml water
  • Pinch of black pepper
  • Red or green chili pepper, a little (optional)
  • 1 egg

Cooking Instructions

Step 1

First, prepare half a pack of soft tofu and carefully cut it into large chunks, preserving its shape. Be careful not to break it up too much, as this can make the broth cloudy.

Prepare 3 slices of frozen, thinly sliced pork belly to add a savory depth to the ramen. The delicious fat rendered from the pork belly will significantly enhance the broth’s flavor.

Finely chop the green onion. If you prefer a spicier kick, slice some chili peppers as well. (Using Cheongyang chili peppers will make it even spicier.)

Heat a pot over medium heat and add the thinly sliced pork belly. Cook it until it’s lightly browned. Since the pork belly itself renders fat, you don’t need to add any cooking oil.

Once the pork belly is golden brown, add the chopped green onion and 1 teaspoon of minced garlic. Sauté them together to release their fragrant aromas. Be careful not to burn the garlic.

Add 2/3 tablespoon of red pepper flakes and stir-fry briefly to release the chili oil. Then, add about 2/3 to 1 packet of the Yeol Ramen soup base. (Adjust the amount based on your spice preference.)

By stir-frying the red pepper flakes and soup base first, you can create a ramen broth that is more spicy and robust, yielding a deeper flavor.

Pour in 350ml of water and bring it to a boil over high heat. If you prefer a soupier broth, you can add up to 400ml.

Once the water is rapidly boiling, add the ramen noodles and the dried vegetable packet. Gently loosen the noodles to prevent them from sticking together.

When the noodles are partially cooked and have loosened, carefully add the large chunks of soft tofu. Stir gently to avoid breaking the tofu, and continue to simmer for about 1 minute. Finally, crack in the egg and add the sliced chili peppers, simmering briefly to finish.

Turn off the heat just before the noodles become too soft, while they still retain a pleasant al dente texture. Your delicious Soft Tofu Yeol Ramen is now complete! Enjoy it while it’s hot.
