Ingredients

  • 1 Tbsp cooking oil
  • 1 Tbsp sesame oil
  • 1.5 Tbsp red chili flakes (gochugaru)
  • 1 stalk green onion (separate white and green parts)
  • 1 package soft tofu (350g)
  • 4 cups water (800ml)
  • 1 Tbsp salted fermented shrimp (saeujeot)
  • 3 eggs
  • 0.5 tsp salt (or to taste)
  • Pinch of black pepper

Cooking Instructions

Step 1

Heat a pot of medium-low heat. Add 1 Tbsp cooking oil and 1 Tbsp sesame oil. Once warm, add the white parts of the chopped green onion and sauté for about 1-2 minutes until fragrant. This process creates a flavorful leek oil base for the soup.

Add 1.5 Tbsp red chili flakes (gochugaru) to the pot and stir-fry for about 30 seconds, making sure not to burn them. Stirring them into the oil helps to deepen their color and mellow any raw bitterness, enhancing the spicy flavor.

Gently break apart 1 package of soft tofu (350g) into large chunks using a spoon and add it to the pot. Stir in 1 Tbsp of salted fermented shrimp (saeujeot) for umami and seasoning. Pour in 4 cups (800ml) of water, then increase the heat to high and bring the soup to a boil.

Once the soup is boiling vigorously, reduce the heat to medium. Lightly whisk 3 eggs in a separate bowl. Slowly drizzle the whisked eggs into the simmering soup, allowing them to set for about 10 seconds before gently stirring to create ribbons of cooked egg. Add the green parts of the chopped green onion.

As the egg cooks, gently stir the soup, ensuring the egg forms delicate strands rather than breaking into tiny pieces. Season with 0.5 tsp salt, adjusting to your preference. Finish with a pinch of black pepper. Serve immediately and enjoy this warming, spicy, and comforting soft tofu egg soup!
