Step 1
To begin making your delicious skate pancakes, prepare your fresh skate fillet. It’s best to use fillets that are already deboned and skinless for easier preparation.

Now, let’s prepare the batter for the skate pancakes. In a mixing bowl, combine 3 tablespoons of pancake mix, 1 egg, 1 finely minced Cheongyang chili pepper for a nice kick, and 1-2 pinches of black pepper. The chili adds a lovely spicy note that complements the skate’s unique flavor.

Using a spatula or a whisk, mix the ingredients thoroughly until no dry powder remains. At this stage, the batter might seem a bit thick and sticky – this is perfectly normal!

Gradually add 50ml of water while stirring to achieve the desired batter consistency. You’re aiming for a smooth, pourable batter, slightly thinner than pancake batter. Once you reach this consistency, your batter is ready!

Add the 150g of prepared skate fillet pieces into the batter. It’s time for the skate to get coated!
