Essential Ingredients
  • 1kg cleaned and prepared blue crab
  • 1/4 cup cooking wine (like Mirin or Cheongju)
  • 1/6 medium onion
  • 2 Cheongyang peppers (spicy Korean chili peppers)

Seasoning Ingredients
  • 1 cup gochugaru (Korean chili powder)
  • 1/4 cup soy sauce for brewing
  • 1/4 cup fish sauce (anchovy or sand lance)
  • 1/2 cup rice syrup or corn syrup
  • 5 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon toasted sesame seeds

Cooking Instructions

Step 1

Gently rinse the cleaned blue crabs under running water to remove any impurities and pat them dry. In a bowl, add 1/4 cup of cooking wine and gently mix it with the crabs. Let them marinate for about 10 minutes. This step helps to eliminate any fishy odor.

Step 2

Thinly slice the onion. Finely chop the Cheongyang peppers, removing the stems. (You can also finely chop some green onions to add if you like).

Step 3

In a separate bowl, combine 1 cup of gochugaru, 1/4 cup of soy sauce, 1/4 cup of fish sauce, 1/2 cup of rice syrup (or corn syrup), 5 tablespoons of minced garlic, and 1 tablespoon of minced ginger. Mix well to create the seasoning paste. Let the seasoning sit for about 5 minutes to allow the gochugaru to soften and bloom.

Step 4

Add the marinated crabs to the softened seasoning paste. Also, add the sliced onions and chopped Cheongyang peppers. Gently mix everything together with your hands, ensuring the seasoning coats the crabs evenly. Sprinkle 1 tablespoon of toasted sesame seeds at the end for added nutty flavor. You can enjoy it immediately, or for a deeper flavor, refrigerate it for about a day to allow the flavors to meld.
