Main Ingredients

  • 2 packs Jin Ramen (spicy flavor)
  • 6 cloves garlic
  • 2 stalks green onion
  • 1 Tbsp cooking oil (can use rendered pork fat)
  • 100g pork belly
  • 1/2 carrot
  • 1 onion
  • 1/2 zucchini
  • 6 large shrimp
  • 4 shiitake mushrooms
  • 2 imitation crab sticks
  • 1L rich anchovy broth (or water)
  • 1 handful bean sprouts

Cooking Instructions

Step 1

First, prepare the aromatics and vegetables that will build the foundation of your jjamppong’s flavor. Finely mince the 6 cloves of garlic. Wash and thinly slice the 2 stalks of green onion. If you have rendered pork fat from cooking pork belly, use about 1 tablespoon of it for extra richness; otherwise, prepare 1 tablespoon of cooking oil.

Heat a pan over medium heat and add the cooking oil or rendered pork fat. Add the minced garlic and sliced green onions and stir-fry until fragrant. Next, add the 100g of pork belly, cut into bite-sized pieces, and sauté until golden brown. As the pork cooks, it will release flavorful fat, creating a delicious base.

Once the pork is partially cooked, add both of the seasoning soup packets from the 2 packs of Ottogi Jin Ramen (spicy flavor). We are using the ramen noodles later, but the soup packets will form the base of our jjamppong broth.

Stir-fry the ingredients and soup packets together over medium heat for about 1 minute, allowing the flavors to meld and deepen. This step helps to bloom the spices and enhance the overall umami.

Now it’s time to add the vegetables for texture and sweetness. Julienne the 1/2 carrot, 1 onion, and 1/2 zucchini. Add the julienned vegetables to the pan and stir-fry over high heat for a short time to keep them crisp. Avoid overcooking them at this stage.

Let’s add the seafood to make the jjamppong even more luxurious. Peel and devein the 6 large shrimp. Slice the 4 shiitake mushrooms and tear or slice the 2 imitation crab sticks into bite-sized pieces. Add these seafood ingredients to the pan and quickly stir-fry over high heat to maintain their fresh flavor and texture.

Pour in the 1 liter of pre-made rich anchovy broth. If you don’t have anchovy broth, you can use store-bought broth or plain water, but anchovy broth will provide a deeper, more refreshing taste. Bring the broth to a rolling boil over high heat.

Once the broth is boiling vigorously, add the ramen noodles from the 2 Jin Ramen packs. For extra spice, finely chop and add Cheongyang peppers or an additional tablespoon of gochugaru. Cook over high heat for about 3-4 minutes, or until the noodles are al dente. Be careful not to overcook the noodles, as they can become mushy.

When the noodles are cooked to your liking, add the handful of bean sprouts and cook just until they are slightly wilted. For an extra aromatic touch, you can add a few fresh basil leaves. Feel free to add other vegetables you enjoy, such as cabbage or mushrooms.
