Main Ingredients

  • Yeolmu Kimchi (well-fermented or slightly sour) 1 bag
  • Broth or Anchovy-Kelp Broth 500ml
  • Canned Spicy Tuna 1 can (150g)
  • Tofu 1 block (half a block is also fine)
  • Green Onion 1/4 stalk (adjust to taste)

Seasoning

  • Perilla Oil 0.5 Tbsp
  • Gochugaru (Korean chili powder) 1 Tbsp (adjust based on kimchi’s saltiness and spiciness)
  • Sugar 1 Tbsp
  • Soy Sauce 1 Tbsp (optional, depending on kimchi’s saltiness)

Cooking Instructions

Step 1

First, prepare the yeolmu kimchi. If it’s too sour, gently rinse it under running water and squeeze out excess moisture. (If it’s just properly fermented, you can use it directly without rinsing.) This step helps to balance the sourness and makes the stew cleaner tasting.

In a deep pot, combine the prepared yeolmu kimchi with 0.5 Tbsp perilla oil, 1 Tbsp gochugaru, and 1 Tbsp sugar. Mix well to coat the kimchi. Then, stir-fry over medium heat for 2-3 minutes. Stir-frying enhances the kimchi’s deep flavor, making the stew more delicious.

Once the kimchi is softened from stir-frying, pour in 500ml of prepared broth. Bring to a boil over high heat, then reduce to medium-low and simmer for 20-30 minutes. It’s important to simmer long enough for the kimchi to become tender and for the flavors to meld.

Taste the stew and add 1 Tbsp soy sauce if needed to adjust the seasoning. The amount of soy sauce can be adjusted or omitted depending on the saltiness of the kimchi itself. It’s generally best not to over-season the kimchi stew initially.

Now, add the star ingredient that elevates the stew’s flavor: 1 can of spicy tuna! The spiciness and oil from the tuna will blend into the broth, creating a fantastic savory taste. Simply open the can and add it directly.

Cut 1 block of tofu into bite-sized pieces and add it to the pot. Also, add the thinly sliced green onion. Tofu adds a soft texture to the stew, while green onions contribute a refreshing aroma, making it even more enjoyable.
