Spicy & Savory Stir-Fried Glass Noodles with Aged Kimchi

Introducing a delicious stir-fried glass noodle dish made with aged kimchi, perfect when you’re tired of plain kimchi stir-fries. It’s a simple yet hearty meal that doesn’t take much time to prepare. The harmonious blend of deep-flavored aged kimchi and chewy glass noodles is truly satisfying.
Main Ingredients- 4 sheets of aged kimchi
- 1.5 Tbsp sesame oil
- 6 Tbsp kimchi juice
- 50g dried glass noodles
- 100ml water
Cooking Instructions
Step 1
Cut the 4 sheets of aged kimchi into bite-sized pieces (about 2-3 cm wide). In a pan, combine the aged kimchi and 1.5 Tbsp of sesame oil. Stir-fry over medium heat for about 3-5 minutes until the kimchi softens and becomes tender. For an even richer flavor, you can stir-fry pork belly slices along with the kimchi. (If adding pork belly, cook it with the kimchi to render its fat.)
Step 2
Add about 6 Tbsp of kimchi juice to the stir-fried aged kimchi and mix well. Soak the 50g of dried glass noodles in cold water for about 10 minutes, or briefly soften them in the microwave for 1-2 minutes. Add the soaked glass noodles to the pan, then pour in 100ml of water. Cover the pan or leave it uncovered, and simmer over medium-low heat for about 5-7 minutes, or until the glass noodles are cooked. Stir occasionally to prevent the noodles from sticking to the bottom of the pan.
Step 3
Once the glass noodles are cooked to your liking and the sauce has thickened slightly, just before turning off the heat, drizzle 1 Tbsp of sesame oil around the edges of the pan for a fragrant finish. Mix everything together one last time. Your spicy and savory stir-fried glass noodles with aged kimchi are now ready! Enjoy them while hot.
