This dish features pan-fried tofu coated in a rich, savory miso sauce, enhanced with the vibrant flavors of leeks and chives. The gentle heat from the chili, combined with the fragrant chives and deep umami of the miso, creates a truly mouthwatering experience. Main Ingredients- 1 block Tofu (approx. 300g)
- 2/3 stalk Green Onion (thinly sliced)
- 1 Chili pepper (seeded and julienned)
- 1 handful Chives (cut into 3-4cm lengths)
- 1.5 Tbsp All-purpose flour
Miso Sauce- 2 Tbsp Miso paste
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Minced garlic
- 1/2 Tbsp Sugar
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds

Cooking Instructions
Step 1
Slice the tofu into uniform pieces, about 0.8-1cm thick. Lightly pat dry with paper towels. Heat a generous amount of cooking oil in a pan over medium heat and pan-fry the tofu until golden brown on all sides. (Tip: Covering the pan while frying can help keep the tofu moist and tender.)
Step 2
Prepare the vegetables: cut the chives into 3-4cm lengths, and thinly slice the green onion. Seed the chili pepper and julienne it. In a small bowl, combine the miso paste, gochugaru, minced garlic, and sugar, mixing well to create the sauce.
Step 3
In a separate bowl, mix the all-purpose flour with 3 Tbsp of water until smooth, creating a thin batter.
Step 4
Arrange the fried tofu pieces in a wide pan or pot. Scatter the sliced green onions and julienned chili peppers over the tofu. Spoon the prepared miso sauce evenly over everything.
Step 5
Pour in about 1/2 cup (100ml) of water for braising. Cover the pan and bring to a simmer over medium heat. Once boiling, reduce the heat to low and let it braise for about 5 minutes, allowing the flavors to meld into the tofu.
Step 6
When the sauce has reduced slightly, add the cut chives. Gradually drizzle in the flour mixture made in step 2 around the edges of the pan, gently stirring to incorporate it. (Tip: The flour mixture will thicken the sauce, adding richness and body to the dish.)
Step 7
Cover again and cook on low heat for another 1-2 minutes, just until the chives are tender. Turn off the heat, drizzle with sesame oil, and sprinkle with toasted sesame seeds. Your delicious Spicy Savory Miso Braised Tofu is ready! Enjoy it with a warm bowl of rice.
