- 1 Ladle of Well-Fermented Kimchi (approx. 150g, finely chopped)

- 1.5 Bowls of Warm Cooked Rice (approx. 300g)

Cooking Instructions
Step 1
Heat 1-2 Tbsp of cooking oil in a preheated pan over medium heat. Add the chopped kimchi (1 ladleful) and stir-fry until it becomes translucent. If your kimchi is particularly sour, you can add a tiny pinch of sugar.
Step 2
Once the kimchi is nicely sautéed, add the warm cooked rice (1.5 bowls). Use a spatula to break up any clumps and mix the rice thoroughly with the kimchi. It’s important to ensure the rice grains are separated.
Step 3
Drizzle 1 Tbsp of sesame oil over the rice for a nutty fragrance. Adding sesame oil later helps preserve its aroma.
Step 4
Pour 2 Tbsp of soy sauce around the edges of the pan and stir-fry it with the rice. The soy sauce will slightly caramelize from the heat, adding a deeper flavor. Adjust the amount of soy sauce based on its saltiness.
Step 5
Push the fried rice to one side of the pan, creating a clear space in the center. Add about 1 Tbsp of cooking oil (like olive oil) to this cleared space. This step is for cooking the eggs gently.
Step 6
Carefully crack the 2 prepared eggs into the center space, trying not to break the yolks. Once the egg whites begin to set, gently scramble them with chopsticks or a spatula until cooked through.

When the eggs are partially cooked, gently mix them with the rice and continue to stir-fry. Now, add 0.5 Tbsp of Dashida (or your preferred umami seasoning) and stir-fry once more until all ingredients are well combined. You can adjust the amount of Dashida or omit it according to your preference.
