Grilled Blackthroat Seaperch with a Sweet and Spicy Sauce Recipe

This recipe brings back fond childhood memories of my mom cooking Blackthroat Seaperch (also known as ‘Imyeon-su’), a fish I used to love. While I find it hard to replicate that exact nostalgic taste nowadays, I’ve found a way to bring back the deliciousness using my homemade versatile spicy red pepper paste. This dish offers a delightful combination of crispy exterior and tender, flavorful flesh, making it a perfect side dish for rice or a tasty snack.

Main Ingredients
  • 1 prepared Blackthroat Seaperch
  • 2 Tbsp tempura flour (or all-purpose flour)
  • Plenty of cooking oil
  • A little chopped green onion (for garnish)

Spicy Sauce
  • 3 Tbsp versatile spicy red pepper paste

Cooking Instructions

Step 1

Rinse the cleaned Blackthroat Seaperch under cold running water and pat it dry gently.

Step 2

Evenly coat the fish on both sides with 2 tablespoons of tempura flour. Let it sit for about 5 minutes so the flour adheres well to the fish.

Step 3

Heat a pan over medium heat and add a generous amount of cooking oil. Carefully place the floured fish into the hot oil. Grill until the exterior turns golden brown.

Step 4

Once one side is golden brown, flip the fish and grill the other side until equally delicious. If there’s too much oil in the pan during cooking, you can carefully drain some of it off for a lighter taste.

Step 5

When the fish is nicely browned, reduce the heat to low. Brush 3 tablespoons of the prepared versatile spicy red pepper paste evenly over both sides of the fish. Gently grill for another short moment on each side over low heat, allowing the sauce to penetrate the fish without burning.

Step 6

Transfer the deliciously grilled Blackthroat Seaperch to a serving plate. Sprinkle a little chopped green onion on top as a garnish. Your flavorful spicy grilled seaperch is now ready to enjoy!
