Seasoning Ingredients

  • 1 Tbsp Doenjang (Korean soybean paste – homemade or store-bought)
  • 1/2 Tbsp Toasted Sesame Seeds (For added nutty flavor)
  • 1/2 Tbsp Minced Garlic (For aromatic depth)
  • 1/3 Tbsp Sesame Oil (For shine and flavor)

Start by preparing the fresh chili pepper leaves. Remove any tough or fibrous stems by trimming them with a knife or gently pulling them off by hand for a clean finish. Using mostly the tender leaves will result in a softer texture.

In a large pot, bring plenty of water to a rolling boil with a pinch of salt. Once boiling, add the prepared chili pepper leaves and blanch them quickly for about 30 seconds to 1 minute over high heat. Be careful not to overcook, as they can become mushy.

Immediately after blanching, drain the chili pepper leaves and rinse them under cold running water to cool them down quickly. This step helps preserve their vibrant color and maintain a crisp texture. Drain them in a colander for a while to remove excess water.

Place the drained chili pepper leaves in a bowl. Add 1 Tbsp of doenjang, 1/2 Tbsp of toasted sesame seeds, 1/2 Tbsp of minced garlic, and 1/3 Tbsp of sesame oil. Gently mix everything together with your hands, massaging the ingredients until the seasoning is evenly distributed. Adjust the amount of doenjang based on its saltiness.
