Boiling the Chicken Feet

  • 2kg raw chicken feet
  • 5 bay leaves
  • 1/2 bottle soju (Korean rice wine)
  • 2L water

Spicy Seasoning Sauce

  • 4 Tbsp gochujang (Korean chili paste)
  • 8 Tbsp gochugaru (Korean chili flakes) (adjust to spice preference)
  • 1 Tbsp doenjang (Korean soybean paste)
  • 1 onion (medium size)
  • 2 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 6 Tbsp sugar (adjust to sweetness preference)
  • 6 Tbsp soy sauce
  • 6 Tbsp maesilcheong (Korean plum syrup)
  • 2 Tbsp chicken stock (or 1/2 cup water if unavailable)
  • 4 Tbsp oyster sauce
  • 1 stalk green onion
  • Generous amount of black pepper

Cooking Instructions

First, thoroughly wash the 2kg of raw chicken feet under running water, both inside and out. This step is crucial for removing any impurities.

Place the cleaned chicken feet in a pot and add enough water (2L) to fully submerge them. Add 5 bay leaves and 1/2 bottle of soju. Bring to a boil over high heat and simmer for 30 minutes. The bay leaves and soju will help remove any gamey odor from the chicken feet.

While the chicken feet are boiling, skim off any impurities or foam that rises to the surface. This will help create a clearer broth.

After boiling for 30 minutes, drain the chicken feet and rinse them again under cold running water. This removes any stickiness or residue from the boiling process, preparing them for the next stage.

Return the drained chicken feet to the pot and add 2L of fresh water. This will form the base for your flavorful broth. A generous amount of broth is key to this recipe!

In a bowl, combine 4 Tbsp gochujang, 8 Tbsp gochugaru, 1 Tbsp doenjang, 2 Tbsp minced garlic, 1 Tbsp minced ginger, 6 Tbsp sugar, 6 Tbsp soy sauce, 6 Tbsp maesilcheong, 2 Tbsp chicken stock, and 4 Tbsp oyster sauce. Mix well. (Feel free to adjust the spiciness and sweetness to your liking.)

Peel and roughly chop 1 onion. Place it in a blender and blend until smooth. The blended onion will add sweetness and depth to the broth.

Cover the pot and simmer over medium-high heat for about 50 minutes. It’s important to let it simmer gently to allow the flavors to meld and the chicken feet to become tender.
