I spotted some fresh potatoes at the supermarket and decided to whip up a potato strip stir-fry! Potato strips are always a hit, and adding savory sausage and spicy chili peppers makes this dish incredibly delicious and not at all greasy.   • 1 large potato
  • 1 sausage
  • 1/2 stalk green onion
  • 4 cloves garlic
  • 1 chili pepper (e.g., jalapeño or Korean green chili)

  • 1 Tbsp anchovy sauce (or fish sauce)
  • 1 Tbsp cooking oil
  • 1 tsp sesame oil
  • A pinch of sesame seeds

Cooking Instructions

First, prepare all your ingredients. Peel the potato thoroughly. Rinse the sausage under hot water to remove any residue. Prepare about half a stalk of green onion and 4 cloves of garlic. Also, get one chili pepper ready. Having all your ingredients prepped beforehand makes the cooking process much smoother.

Slice the prepared potato into thin strips. Rinsing the potato strips in cold water will remove excess starch, preventing them from sticking together during stir-frying and resulting in a cleaner dish. Drain the rinsed potato strips well in a colander.

Slice the sausage into strips similar in length to the potato strips. This ensures a good ratio of potato to sausage when stir-fried, making it even more delicious.

You can thinly slice the garlic or mince it. Slicing the garlic thinly allows its flavor to infuse subtly into the dish, adding depth and umami.

Cut the green onion lengthwise, similar to the length of the potato and sausage strips. The fragrant aroma of the green onion will further enrich the flavor of the stir-fry.

Finely chop the chili pepper. If you prefer it spicier, you can leave the seeds in. Once all ingredients are prepared, you’re ready to start stir-frying!

Tip! If your potato strips are cut a bit thick, or if you want to speed up the cooking process, microwave them for about 2-3 minutes until slightly tender. This reduces the stir-frying time. Now, heat 1 tablespoon of cooking oil in a frying pan over medium-low heat. Add the sliced garlic and stir-fry until fragrant and lightly golden. Once the garlic starts to turn golden, add the potato strips and continue to stir-fry over medium heat.

As the potatoes begin to cook, add the sliced sausage and stir-fry them together. The potatoes and sausage will combine to create a delicious flavor.
