Cooking Instructions
Step 1
First, prepare all the necessary ingredients for making this delicious sausage and bean sprout stew.
Step 2
Thoroughly wash the fresh bean sprouts under running water. After washing, drain them well in a colander to remove excess water, which helps prevent the stew from becoming too watery later.
Step 3
Prepare the vegetables for easy eating. Slice the onion into approximately 1 cm wide strips. Cut the green onion diagonally. For the Vienna sausages, you can make shallow diagonal cuts or slice them diagonally to help them absorb the sauce better.
Step 4
Heat a little cooking oil in a pan and stir-fry the Vienna sausages until they turn a nice golden brown. Once the sausages are about halfway cooked and look appetizing, pour in 1 cup of water (about 200ml using a paper cup) and bring it to a boil. Stir-frying the sausages first adds a deeper flavor.
Step 5
Once the water starts boiling, add the prepared green onions, sliced onions, and the washed bean sprouts to the pan. Now, add all the seasoning ingredients except for the sesame oil (2 Tbsp Gochujang, 2 Tbsp Gochugaru, 4 Tbsp Soy Sauce, 1 Tbsp Sugar, 1 Tbsp Minced Garlic). Mix everything well so the ingredients are evenly coated with the sauce.
Step 6
Now, cover the pan with a lid and let it simmer vigorously over medium heat for about 4-5 minutes. Cooking with the lid on is recommended to prevent any unpleasant ‘bean sprout’ smell. Although it might seem like there isn’t enough liquid initially, the bean sprouts and vegetables will release their natural moisture as they cook, creating a tender stew.
Step 7
When the bean sprouts have softened and the sauce has reduced to a simmer, remove the lid and check if the ingredients are fully cooked. If the bean sprouts are still a bit undercooked and the sauce has become too thick, add a little more water (using a paper cup) and continue simmering until you reach your desired consistency.
Step 8
Once the sauce has thickened to your liking, drizzle in 1 tablespoon of sesame oil for a nutty aroma and stir gently to combine. Transfer the stew to a serving dish and sprinkle with a pinch of sesame seeds for a beautiful garnish. Your delicious sausage and bean sprout stew is now ready!
Step 9
This hearty sausage and bean sprout stew boasts a bold, spicy flavor that rivals seafood stews and Jjamppong. It’s incredibly delicious served over warm rice with a sprinkle of shredded seaweed!
Step 10
This delightful dish is not only a fantastic side for rice but also an excellent choice as an appetizer with your favorite beverage.
