First, peel and thinly julienne the radish. Place the julienned radish in a bowl, add a pinch of salt, a little sugar, and vinegar. Let it sit for a few minutes to slightly pickle. This step helps to soften the radish while retaining its crispness and reducing any bitterness. Thinly slice the onion. For this recipe, we won’t be soaking the onion to remove its pungent flavor; instead, we’ll toss it directly with the wasabi dressing to enhance its natural taste.

In particular, I aim to use purple vegetables, which are known to be rich in anthocyanins, beneficial for eye health. Now, let’s prepare the flavorful dressing. In a bowl, combine 1/4 Tbsp of wasabi paste for that signature spicy kick, 1/2 Tbsp of soy sauce for umami depth, and a pinch of salt to enhance all the flavors. Add 1 Tbsp of plum extract for a complex sweetness; if you don’t have plum extract, a good quality corn syrup works wonderfully as a substitute. Next, add 4 Tbsp of vinegar for a refreshing tang and 1 Tbsp of corn syrup or honey for a balanced sweetness. Whisk all the ingredients together until well combined. This creates a versatile dressing that pairs beautifully with many dishes.

It’s known to have antibacterial properties, particularly against Helicobacter pylori, which can cause stomach issues.
