- 1 Tbsp Sugar
Cooking Instructions
Step 1
First, let’s prepare the spicy seasoning mix, the heart of this delicious eomuk-tang. In a bowl, combine 2 tablespoons of gochugaru, 1 tablespoon of soy sauce, 1 tablespoon of gochujang, 1 tablespoon of minced garlic, and 1 tablespoon of sugar. Mix them well until thoroughly combined. This seasoning blend is key to achieving that wonderful broth flavor!
Step 2
Next, we’ll prepare the fish cakes for a beautiful presentation and better flavor absorption. Fold each square fish cake in half lengthwise, then pleat it into a zig-zag shape and thread it onto skewers. This technique helps the fish cakes soak up more broth and makes them easier to eat. If you don’t have skewers, you can skip this step.
Step 3
Now, it’s time to create a deep and refreshing broth. Pour 900ml of water (about 5 standard paper cups) into a pot. Add the anchovy-kelp broth packet and let it simmer gently over medium heat for about 10 minutes. This will yield a clean and deeply flavored broth base.
Step 4
Once the broth is ready, remove and discard the broth packet. Stir in the prepared spicy seasoning mix until it’s fully dissolved into the broth. Then, carefully add the prepared fish cakes to the pot and let them simmer for about 5 minutes. It’s important to allow the fish cakes to absorb the flavors of the seasoning well.
Step 5
Finally, add the roughly chopped green onion to the soup and let it simmer for just one more minute. The fresh aroma of the green onion will further enhance the broth’s flavor. A brief simmer, and your spicy red eomuk-tang will be ready to enjoy! Serve it hot and savor the taste.
