Spicy Ramyeon with Secret ‘Geomisae’ Seasoning Sauce

Transform your everyday ramyeon into a gourmet meal with a homemade spicy seasoning sauce made from dried shrimp, seaweed, and green onions. It adds a deep, savory, and pleasantly spicy kick that will tantalize your taste buds.
Geomisae Seasoning Sauce Ingredients- 1 cup rehydrated seaweed (soaked and finely chopped with scissors)
- 1/2 cup dried shrimp powder (or ground dried shrimp)
- 1 cup chopped green onions
- 3 Tbsp red pepper flakes (for extra heat, use 1 Tbsp Korean chili powder for spicy dishes and 2 Tbsp regular red pepper flakes)
- 5 Tbsp cooking oil

Step 1
Let’s start by preparing the ingredients for the Geomisae seasoning sauce. 1. Rehydrate 1 cup of dried seaweed in water, then finely chop it using kitchen scissors. 2. Finely chop 1 cup of green onions.

If you don’t have dried shrimp powder, lightly toast dried shrimp in a pan over low heat until fragrant. This step helps to remove any fishy smell and enhance the shrimp’s natural flavor.
Step 3
Place the toasted dried shrimp (or dried shrimp powder) into a blender and grind it into a fine powder. This ensures the shrimp flavor distributes evenly in the sauce.

Heat a frying pan over medium heat and add 5 tablespoons of cooking oil.

Add the chopped green onions to the hot oil. Sauté them, being careful not to burn, until they are lightly fried and fragrant. The goal is to extract as much of the green onion’s aroma as possible.

This process creates a wonderfully aromatic ‘scallion oil’. You’ll know it’s ready when the green onions turn a lovely golden brown and release a sweet scent.

Once the scallion oil is ready, add the chopped rehydrated seaweed to the pan and sauté it with the green onions. The seaweed will become tender and coated in the flavorful oil.

Next, add the 1/2 cup of dried shrimp powder (or ground dried shrimp) to the mixture. Stir well to combine everything.

Add 3 tablespoons of red pepper flakes. If you prefer a spicier kick, consider using 1 tablespoon of ‘Gochugaru’ (Korean chili powder for spicy dishes) and 2 tablespoons of regular red pepper flakes.
