Spicy Radish Salad from Dongchimi
(Side Dish) Delicious Spicy Radish Salad!
Do you have leftover dongchimi radishes from making kimchi? While delicious on their own, sometimes you might want a change. Don’t throw them away! Instead, transform them into a vibrant and flavorful side dish. This dish offers a unique taste, distinct from regular seasoned radishes (musaengchae), and is incredibly satisfying. The crisp texture and the unique savory essence of dongchimi make this a delightful treat.
Main Ingredients- 3-4 Dongchimi radishes
- A little bit of white part of green onion
Seasoning- 1 Tbsp minced garlic
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar
- 2 Tbsp sesame oil
- 2 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Prepare the dongchimi radishes for your delicious salad. Rinse them thoroughly under running water.
Step 2
Slice the dongchimi radishes into julienne strips, slightly thicker than you would for a standard spicy radish salad (musaengchae). Soak the julienned radishes in cold water for about 10-15 minutes to remove some of the saltiness from the dongchimi brine. (Adjust soaking time based on how salty your dongchimi is.)
Step 3
Place the julienned radishes into a fine-mesh bag, a reusable tea bag, or cheesecloth. Squeeze out as much water as possible. The drier the radish, the crisper the final texture will be.
Step 4
Finely mince only the white parts of the green onion.
Step 5
In a bowl with the squeezed-out radishes, add the minced green onion, minced garlic, and all other seasoning ingredients (gochugaru, sugar). Tip: It’s best to add the sesame oil towards the end, after you’ve started mixing, for maximum fragrance and flavor.
Step 6
Gently mix all the ingredients together with your hands until the seasoning is evenly distributed throughout the radish. Be careful not to overmix, as this can make the radish mushy.
Step 7
This finished dongchimi radish salad offers a delightful alternative to regular seasoned radishes. The refreshing savory notes characteristic of dongchimi, combined with its crisp texture, create a truly special side dish. It’s perfect with rice or as a light accompaniment to drinks!
