Spicy Radish Salad (Dongchimi Radish)
Quick and Refreshing Radish Salad Using Pickled Dongchimi Radish!
I’ve turned some leftover dongchimi radish from last winter into a simple, spicy radish salad, similar to ‘mu-saengchae’! It’s a delicious and simple alternative to expensive cabbage kimchi. Enjoy its delightful crispness and tangy flavor.
Main Ingredients- 3-4 Dongchimi Radishes (pickled radish)
- A little Green Onion
Seasoning- 2-3 Tbsp Gochugaru (Korean chili flakes)
- 1-1.5 Tbsp Minced Garlic
- 1 Tbsp Sugar
- 1.5 Tbsp Sesame Oil
- A little Toasted Sesame Seeds

Cooking Instructions
Step 1
Prepare the dongchimi radishes. If you have purple dongchimi radishes, they add a beautiful color, though the color might fade somewhat after pickling. Cut them into strips, slightly thicker than you would for regular mu-saengchae.
Step 2
Rinse the cut radish strips in cold water to remove excess saltiness. Taste a piece to gauge the saltiness and adjust the soaking time accordingly. Once the saltiness is reduced to your preference, place the radish strips in a cheesecloth or a fine-mesh bag and squeeze out as much water as possible. This step is crucial for achieving a crisp texture.
Step 3
Ensure you squeeze out the water very thoroughly, similar to how you would prepare dried radish strips (mu-malengi). You might notice some residual purple hue, which adds to the visual appeal.
Step 4
Finely chop the white part of the green onion. In a bowl, combine the squeezed radish strips, chopped green onion, and all the seasoning ingredients: gochugaru, minced garlic, sugar, sesame oil, and sesame seeds. Adjust the sugar to your desired sweetness. If the salad tastes a bit bland, you can add a tiny pinch of salt to balance the flavors.
Step 5
Gently mix all the ingredients together with your hands until everything is evenly coated with the seasoning. Your refreshing and delicious dongchimi radish salad is now ready to be served! Enjoy its crisp texture and delightful savory-sweet flavor.
