  • 300g aged kimchi

Prepare the hand-pulled noodle dough. In a bowl, combine the flour and salt. Gradually add water while mixing until a cohesive dough forms. Ensure the dough is neither too sticky nor too stiff. Once formed, wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes to rest. This resting period will make the noodles chewier.

Prepare the ingredients. Finely chop the aged kimchi into bite-sized pieces (about 2-3 cm). Slice the potato, carrot, onion, and zucchini into thick strips, about 0.5 cm thick. Slice the green onion diagonally.

For a charming touch! You can lightly score the carrot and zucchini or use cookie cutters to shape them into hearts or other fun designs. This step is optional but adds a delightful visual appeal, especially for children.

Now, let’s begin cooking. In a pot, sauté the chopped kimchi with a little kimchi juice until fragrant. Then, pour in the prepared anchovy-kelp broth or rice water and bring it to a boil. Let it simmer until the kimchi becomes tender.

Once the broth is boiling, prepare to add the noodle dough. Take the rested dough, lightly wet your hands, and pinch off small, thin pieces of dough directly into the boiling broth. Be careful not to let the pieces clump together.

As the hand-pulled noodles float to the surface, add the sliced potatoes, onions, and the charmingly shaped zucchini and carrot pieces, along with the green onions. Continue to simmer until the potatoes are cooked through, over medium heat.

Finally, season the soup. Add the minced garlic. Adjust the seasoning with soy sauce for soup or salt as needed, depending on the saltiness of your kimchi. Taste and add more salt if necessary.
