Introducing a recipe for Pork Kimchi Jjigae-style Stir-fry, also known as ‘Jjageuli,’ made with well-fermented kimchi and tender pork in a savory, slightly soupy sauce. This dish is a perfect companion to a bowl of rice, sitting deliciously between a stew and a stir-fry.
Main Ingredients- 450g Pork, for stew
- 300g Aged Kimchi (well-fermented)
- 1/2 Onion
- 1 Green Onion (scallion)
Seasoning- 1 tsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Cooking Wine (e.g., Mirin)
- 2 Tbsp Minced Garlic
- 1/2 Tbsp Ginger Paste or minced ginger
- 1/2 Tbsp Doenjang (fermented soybean paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- A pinch of Black Pepper
- 1 tsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Cooking Wine (e.g., Mirin)
- 2 Tbsp Minced Garlic
- 1/2 Tbsp Ginger Paste or minced ginger
- 1/2 Tbsp Doenjang (fermented soybean paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- A pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare 450g of pork cut for stew. Pork with a good balance of meat and fat will yield a richer flavor.
Step 2
Shake off any excess liquid from the kimchi and chop it into bite-sized pieces (about 2-3 cm). Using well-fermented kimchi will add a deeper flavor.
Step 3
Cut the 1/2 onion into thick slices. It will add sweetness and depth as it cooks.
Step 4
Slice the green onion diagonally. This will be added towards the end for a fresh aroma.
Step 5
In a large bowl, combine the pork with all the seasoning ingredients: 1 tsp sugar, 2 Tbsp soy sauce, 1 Tbsp cooking wine, 2 Tbsp minced garlic, 1/2 Tbsp ginger paste, 1/2 Tbsp doenjang, 2 Tbsp gochugaru, and a pinch of black pepper.
Step 6
Gently mix the seasonings into the pork with your hands, ensuring it’s evenly coated. Let it marinate for about 5 minutes to allow the flavors to penetrate.

Heat a deep pan or pot over medium heat. Add the marinated pork and stir-fry until the exterior is lightly browned.

Once the pork is about halfway cooked, add 2 cups (approx. 400ml) of water and bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer until the pork is fully cooked.
Step 9
When the pork is thoroughly cooked, add the chopped kimchi to the pot and let it simmer together. Cook for at least 10 minutes to allow the kimchi to soften and the flavors to meld.
Step 10
After the kimchi and pork have cooked sufficiently, add the sliced onion and green onion. You can transfer everything to a tabletop pot to continue cooking at the table, or simply let it finish cooking in the current pot. There’s no need to transfer it to another pot and re-boil.
Step 11
Finally, arrange the sliced onion and green onion attractively on top. They will cook down, adding sweetness and fragrance to the dish.
