  • Well-fermented Kimchi: 1/2 head
  • Pork Shoulder (cut into bite-sized pieces): 350g
  • Tofu (cut into bite-sized pieces): 1/3 block
  • Onion (sliced): 1/2
  • Cheongyang pepper (sliced diagonally): 1
  • Red chili pepper (sliced diagonally): 1/2
  • Green onion (sliced diagonally): 1/3
  • Water: 1200-1500ml

Seasoning

  • Perilla oil: 2 Tbsp
  • Minced garlic: 1 Tbsp
  • Kimchi brine: 1-2 ladlefuls (adjust to taste)
  • Sugar: 1 Tbsp (to balance the sourness of kimchi and enhance umami)
  • Red chili powder: 2 Tbsp
  • Black pepper: a pinch

First, prepare the ingredients. Lightly shake out the excess brine from the kimchi and cut it into bite-sized pieces (about 2-3cm). Cut the pork shoulder into pieces that are slightly thicker than bite-sized for a satisfying chew.

Heat 2 Tbsp of perilla oil in a pot over medium heat. Add the cut pork shoulder and stir-fry until the pink color disappears and the pork is lightly browned. Sprinkling a pinch of black pepper at this stage helps remove any gamey odor.

Once the pork is partially cooked, add the chopped kimchi and stir-fry together. Add 1 Tbsp of sugar to mellow the sourness of the kimchi and enhance its deep flavor. Next, add 1-2 ladlefuls of kimchi brine to season and boost the flavor. Pour in 1200-1500ml of water and bring to a rolling boil over high heat for about 10 minutes. Once boiling, reduce the heat to medium, then add 1 Tbsp of minced garlic and 2 Tbsp of red chili powder, mixing well. Cover the pot and simmer for approximately 20 minutes, allowing the kimchi to soften and the broth to deepen in flavor.

When the kimchi is tender, add the cubed tofu. Then, add the Cheongyang pepper for a spicy kick and the green onion for a refreshing taste. Reduce the heat to low and simmer for another 10 minutes, allowing the flavors to meld. Finally, add the red chili pepper for color and simmer briefly. Your stew is ready!
