Today, I’ll guide you through a golden recipe for a deliciously spicy Pork Belly Bulgogi (Samgyeopsal Jeyuk Bokkeum), also known as a spicy stir-fried pork dish with pork belly. This dish is incredibly satisfying!

First, prepare all your ingredients. Cut the pork belly into bite-sized pieces (about 3-4 cm wide). Slice the carrot, onion, and green chili peppers into similar sizes. You can julienne them or cut them into slightly larger chunks. Chop the cabbage similarly. Finally, slice the green onion.

In a bowl, combine the cut pork belly with all the seasoning ingredients: Gochujang (2 Tbsp), Gochugaru (1 tsp), Soy sauce (2 tsp), Sugar (1 tsp), Minced garlic (1 tsp), and a pinch of black pepper. Mix everything thoroughly with your hands, ensuring the pork is well coated. Let it marinate for 10 to 20 minutes in the refrigerator for the flavors to meld beautifully.

While the pork is marinating, soak the Joraengi tteok (rice cakes) in lukewarm water for a few minutes. This will soften them, ensuring they cook tenderly when added to the stir-fry.

Heat a pan over medium heat and add the marinated pork belly. Stir-fry, making sure to scrape the bottom to prevent sticking. If the mixture seems too dry, add 2-3 tablespoons of water to loosen it up. Once the pork is about halfway cooked, add the prepared cabbage, carrot, onion, and green chili peppers to the pan. Stir-fry everything together until the vegetables are tender-crisp. Then, reduce the heat to low and add the soaked Joraengi tteok. Continue to stir-fry until the rice cakes are softened and heated through.
