  • Pork (shoulder or loin recommended) 200g
  • Soft Tofu (Sundubu) 1 pack (approx. 300-350g)
  • Onion 1/2 medium
  • Green Onion 1/2 stalk
  • Korean Green Chili Peppers 2-3 (adjust to spice preference)
  • Dried Shiitake Mushrooms 1 handful (approx. 5-6 mushrooms)
  • Dried King Oyster Mushrooms 1 handful (approx. 2-3 mushrooms)

Seasoning

  • Versatile Gochujang Paste (recommended for stir-frying meat) 2-3 Tbsp
  • Doenjang (Korean soybean paste) 1 tsp
  • Soup Soy Sauce 1 Tbsp (for seasoning)
  • Minced Garlic 1 tsp
  • Sugar 1 tsp (adjust for sweetness)
  • Gochugaru (Korean chili flakes) 1 tsp (optional, for color and extra spice)

Cooking Instructions

Pour 1.5 liters of water into a pot. Add the pork and the dried shiitake and king oyster mushrooms. Bring to a boil over high heat. For best results, soak the dried mushrooms in water beforehand.

While the stew is boiling, roughly chop the onion into strips and slice the green onion diagonally. Avoid slicing the vegetables too thinly, as they will soften nicely during cooking.

Remove the stems from the Korean green chili peppers and finely chop them or slice them thinly. Adjust the amount based on your desired level of spiciness. You can remove the seeds if you prefer less heat.

Once the water in step 1 is boiling vigorously, stir in 2-3 tablespoons of the versatile gochujang paste (specifically, the type recommended for stir-frying meat) until it dissolves. Add 1 teaspoon of doenjang. A small amount of doenjang enhances the complexity and savory depth of the gochujang stew.

Add all the prepared vegetables: onion, green onion, and Korean green chili peppers. Then, carefully add the soft tofu in large chunks. Stir in the minced garlic, gochugaru, and sugar. Gently mix everything together, then reduce the heat to medium and simmer for about 10 minutes. Taste the broth and adjust seasoning with soup soy sauce or salt if needed. Adjust the sugar to your preference for sweetness.
