Hello everyone! Today, I’m going to share a simple and delicious recipe for pork and kimchi stew, a dish loved by many. The broth is incredibly refreshing and spicy, making it a perfect rice companion. Let’s get started step-by-step!

First, cut the kimchi into bite-sized pieces (about 2-3 cm). Also, slice the pork into similar-sized pieces. Heat a pot over medium heat, add a generous amount of cooking oil, and stir in the minced garlic. Sauté the garlic for about 30 seconds until fragrant, being careful not to burn it.

Once the garlic is fragrant, add the sliced pork to the pot. Increase the heat to high and stir-fry the pork until its color changes and it’s no longer pink. You don’t need to cook it through completely at this stage.

Now that the pork is seared, add the chopped kimchi to the pot. Stir-fry them together for about 3-5 minutes until the kimchi becomes slightly translucent and tender. Stir-frying the kimchi deeply enhances its flavor in the stew. After stir-frying, pour in 700ml of water and 1/2 cup of kimchi juice. Bring to a boil over high heat.

Once the stew starts boiling, season it with 1 Tbsp of soup soy sauce. If you don’t have soup soy sauce, regular soy sauce can be used, but soup soy sauce adds a richer flavor. Add the firm tofu, cut into large chunks, and the sliced onion. Set aside the green onions, which you’ll slice diagonally later.

After adding all the ingredients and bringing the stew to a boil, reduce the heat to medium-low and simmer for about 10 more minutes. This allows the flavors to meld beautifully. Finally, stir in 1 Tbsp of gochugaru (Korean chili powder) and let it simmer for another minute or two. For an extra spicy kick, you can add some chopped green chili peppers.
