Spicy Pork and Kimchi Stew
A Deliciously Spicy Pork and Kimchi Stew (Kimchi Jjigae) Recipe
Today, I made a hearty and spicy pork and kimchi stew. When you mix rice with the pork and kimchi from this stew, you won’t need any other side dishes! If you still crave something more, try pairing it with a fluffy rolled omelet (Gyeran Mari). The combination is absolutely divine! Enjoy your delicious meal.
Main Ingredients- 150g well-fermented kimchi
- 200g pork belly
- 500ml anchovy-broth or rice water
- 1/2 onion
- 1/2 block firm tofu
- 1/2 stalk green onion
Seasoning- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp sugar
- 1 Tbsp soy sauce
- 1/2 Tbsp doenjang (fermented soybean paste)

- 1 Tbsp cooking wine or soju

Cooking Instructions
Step 1
First, chop the kimchi into bite-sized pieces. Cut the pork belly into manageable pieces, slice the onion into long, thin strips, and diagonally slice the green onion. Prepare all your ingredients before you start cooking.
Step 2
In a pot, add the pork belly and 1 tablespoon of cooking wine or soju. Stir-fry the pork over medium heat until it’s nicely browned. This step helps to tenderize the meat and reduce any porky smell.
Step 3
Once the pork is browned, add the chopped kimchi to the pot. Continue to stir-fry everything together for about 2-3 minutes. This allows the kimchi to soften and develop a deeper flavor.
Step 4
After stir-frying the kimchi, pour in the anchovy broth or rice water. Rice water adds a subtle creaminess and depth to the stew. Bring the mixture to a rolling boil over high heat with the lid off.
Step 5
Once the stew is boiling, add the seasoning ingredients: 1 Tbsp gochugaru, 1/2 Tbsp sugar, 1 Tbsp soy sauce, 1/2 Tbsp doenjang, and 1 Tbsp minced garlic. Stir well to combine. Reduce the heat to medium-low, cover the pot, and let it simmer for about 10 minutes to allow the flavors to meld beautifully.
Step 6
Finally, add the tofu, sliced onion, and green onion to the pot. Simmer for another 2 minutes, or until the vegetables are tender and heated through. Turn off the heat. Your delicious and hearty pork and kimchi stew is now ready to be enjoyed!
