One day, I suddenly craved pollack roe and impulsively bought some fresh pollack roe at the mart! 😊 Today, I’m going to use that pollack roe to make a simple yet delicious ‘Pollack Roe Mayo Rice Bowl’. By adding Cheongyang peppers, we cut through the richness of the pollack roe mayo, and the combination of popping pollack roe and fluffy scrambled eggs is truly superb. You’ll finish this bowl of rice in no time!

Ingredients

  • 2 Tbsp prepared pollack roe (or 2 Tbsp salted pollack roe)
  • 4 eggs
  • 3 Cheongyang peppers
  • 10 stalks green onions
  • 1/5 onion
  • 1/5 Tbsp sugar
  • 4 Tbsp mayonnaise
  • 1 pinch salt
  • 1 pinch pepper
  • Sesame seeds, to taste
  • Sesame oil, to taste
  • Wasabi, a little

Cooking Instructions

First, let’s prepare the star of today’s dish, the pollack roe, and the other ingredients. About 2 tablespoons of prepared pollack roe is sufficient. If you’re using whole salted pollack roe, peeling about 2 rows will yield approximately 2 tablespoons. Be mindful of the amount as too much can make it salty!

Now, let’s finely chop the vegetables that will be used as toppings for the rice bowl. Finely mince the Cheongyang peppers, green onions, and onion. Cutting the onion thinly and lengthwise will give it a prettier appearance and texture. Chop them with care, imagining how nice they’ll look on top of the rice.

It’s time to prepare the pollack roe! Place the pollack roe on a cutting board and gently scrape it with chopsticks. This way, you can neatly separate the roe without getting the membrane. You can easily extract just the roe pearls.

Let’s make the pollack roe mayo sauce. In a bowl, combine 4 tablespoons of mayonnaise with the finely chopped Cheongyang peppers and 1/5 tablespoon of sugar. Mix well. Finally, add a pinch of pepper for a spicy and flavorful mayo sauce. Thanks to the Cheongyang peppers, this sauce is refreshing and not greasy.

We’ll make soft scrambled eggs. Crack 4 eggs into a pan and beat them well. Cook over medium-low heat until the bottom starts to set and shows a yellowish hue. Then, gently stir with a spatula to create fluffy, soft scrambled eggs that maintain a tender texture.

Finally, plating time! Nicely arrange the warm rice in a bowl. Top with half of the prepared green onions and the soft scrambled eggs. Then, generously add a tablespoon of the prepared pollack roe. Drizzle the prepared spicy pollack roe mayo sauce attractively over the top, and your appetizing rice bowl is complete.

The final touch! Sprinkle some sesame seeds and drizzle a little sesame oil over the pollack roe. The nutty aroma of sesame oil will enhance the pollack roe’s flavor, and the sesame seeds add a pleasant texture.
