  • Leftover Jokbal 200g (cut into bite-sized pieces)
  • Onion 1/4 (thinly sliced)
  • Green Onion 1/2 stalk (sliced diagonally)
  • Water 500ml (approx. 2.5 cups)
  • Cheongyang chili pepper 1 (optional, for extra spice)

Cooking Instructions

Step 1

First, prepare your leftover Jokbal. Remove any bones and cut the meat into bite-sized pieces, about 1-inch cubes. This ensures a pleasant texture in the stew.

Next, prepare the vegetables. Peel and thinly slice the 1/4 onion. Slicing it thinly will help it break down and add natural sweetness to the broth.

Wash the 1/2 green onion and slice it diagonally about 0.5 cm thick. The fresh, sharp flavor of the green onion will enhance the stew’s aroma.

If you enjoy a bit of heat, finely chop the Cheongyang chili pepper. You can remove the seeds to control the spiciness level.

Now, let’s start cooking the stew. In a pot, combine the 500ml of water and the prepared Jokbal. Bring it to a boil over high heat. This initial boiling helps to extract the rich flavors from the Jokbal.

Once the stew reaches a rolling boil, reduce the heat to medium. Cover the pot and let it simmer gently for about 15 to 20 minutes. This simmering time allows the flavors to meld and the Jokbal to become tender.

After the Jokbal has simmered and the broth is flavorful, it’s time to add the seasonings and vegetables. Stir in the minced garlic, Gochugaru, cooking wine, sugar, soy sauce, and black pepper. Add the sliced onions at this stage as well. Bring the stew back to a boil over high heat and cook for another 5 minutes, allowing the flavors to incorporate fully.

Finally, add the diagonally sliced green onions and the chopped Cheongyang chili pepper. Cook for just a minute more until the green onions are slightly wilted. Your delicious Jokbal Jjigae is ready to be served! Enjoy it hot, perhaps with a steaming bowl of rice.
