Spicy Pickled Radish Salad (Danmuji Muchim)

Main Ingredients- Pickled radish (Danmuji) 250g
- Scallions, a suitable amount (cut to similar length as the pickled radish)
Seasoning Ingredients- Gochugaru (Korean chili flakes) 3 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Sesame oil, to taste
- Toasted sesame seeds, to taste

Cooking Instructions
Step 1
First, prepare the pickled radish. If you’re using whole pickled radish, slice it into bite-sized pieces, about 0.5cm thick. If it’s already sliced, you can use it as is. To reduce any artificial taste, you can rinse the pickled radish under cold water for about 5 minutes, then drain thoroughly. This will make the radish crisper!
Step 2
Wash the scallions and trim off the white ends. Cut them into 2-3cm lengths, similar to the size of the sliced pickled radish. The mild pungent flavor of the scallions will complement the sweet and sour taste of the pickled radish beautifully.
Step 3
Place the drained pickled radish into a mixing bowl. Add the prepared scallions. It’s important to squeeze out any excess water from the pickled radish by gently pressing it with your hands; this prevents the seasoning from becoming watery.
Step 4
Now, it’s time to season! Add 1 Tbsp of gochujang and 3 Tbsp of gochugaru to the bowl. Gently mix everything together. You can adjust the amount of gochugaru based on your preferred spice level. I added a bit more as I enjoy a spicier kick! Ensure the seasoning is evenly distributed amongst the pickled radish and scallions.
Step 5
Finally, add 1 Tbsp of sesame oil for a nutty aroma and 1 Tbsp of toasted sesame seeds. Mix gently once more. For an even richer sesame flavor, you can rub the sesame seeds between your palms before adding them. If you like, you can also add a touch of sugar or corn syrup to taste.
Step 6
Voila! Your crispy and flavorful pickled radish salad is ready. This freshly made salad is a wonderful side dish for rice and also makes a fantastic filling for kimbap. Enjoy your delicious creation! (∗❛expansive❛∗)
