Soft Egg Omelet

  • 2 Eggs
  • 2 Pinches Salt
  • 2 Tbsp Milk (16g)

Flavorful Fried Rice

  • 2 Tbsp Finely Chopped Scallion (white part mainly) (20g)
  • 1 Tbsp Minced Garlic (20g)
  • 3 Tbsp Cooking Oil (18g)
  • 50g Ham (any kind)
  • 2 Bowls Cooked Rice (420g)
  • 50g Carrot, finely chopped
  • 2 Pinches Salt

Spicy Special Omurice Sauce

  • 5 Tbsp Store-bought Tomato Spaghetti Sauce (150g)
  • 9.5 Tbsp Milk (75g)
  • 1 Tbsp Sugar (10g)
  • 2 Tbsp Ketchup (40g)
  • 19 Tbsp Water (150g)
  • 1/2 Tbsp Finely Chopped Cheongyang Pepper (very spicy type) (3-4g)
  • 1/2 Tbsp Spicy Curry Powder (5g)
  • 1/2 Tbsp Oyster Sauce (6-7g)
  • 1-2 Pinches Ground Black Pepper
  • 1 Tbsp Tonkatsu Sauce (10g)

Cooking Instructions

Step 1

For a soft egg omelet, crack 2 eggs into a bowl. Add 2 pinches of salt and 2 tablespoons of milk. Whisk thoroughly until well combined. While some remove the egg white chalaza, it’s not strictly necessary for home cooking, as long as it’s mixed well.

Let’s add flavor to the fried rice. Before adding oil to the pan, add 2 tablespoons of finely chopped scallions (focusing on the white parts) and 1 tablespoon of minced garlic.

Pour 3 tablespoons of cooking oil into the pan and set the heat to low. Once the scallions and garlic start to sizzle, indicating their fragrance is released, sauté for another 2 minutes to create an aromatic oil.

Finely dice 50g of ham (use any type you have on hand) and add it to the pan. Increase the heat to medium and stir-fry for about 1 minute until the ham is lightly browned.

Now, add 2 bowls of cooked rice to the pan, along with 50g of finely chopped carrots. Sprinkle with 2 pinches of salt. Turn the heat to high and stir-fry, breaking up the rice clumps with a spatula for about 2 minutes, ensuring each grain is separate and fluffy.

It’s time to make the spicy omurice sauce. Pour 5 tablespoons (about 150g) of store-bought tomato spaghetti sauce into a pot. Many brands now offer convenient 150g single-serving packages. A generous tablespoon should yield about 30g.

Add milk, roughly half the amount of the tomato sauce. If you’re unsure about the exact measurement, use about 80cc of milk or about 9-10 tablespoons measured with a rice spoon. Milk will help make the sauce smoother.

Add 1 tablespoon of sugar for sweetness and 2 tablespoons of ketchup for that classic tangy flavor.

Pour in 150cc of water. This is approximately 19-20 tablespoons if measured with a rice spoon. Don’t worry too much about exact water measurement; you can adjust the simmering time to achieve the desired consistency.

Here comes the secret to the spicy kick for adult taste buds! Add 1/2 tablespoon of finely chopped Cheongyang pepper (about 3-4g of a very spicy variety) and 1/2 tablespoon of spicy curry powder (about 5g) to enhance the sauce’s flavor.

Don’t forget to add 1/2 tablespoon of oyster sauce for umami and 1-2 pinches of ground black pepper to complete the omurice sauce.

Finally, stir in 1 tablespoon (about 10g) of store-bought tonkatsu sauce. Any brand will work, or you can substitute with Worcestershire sauce. This will add a deep richness to the sauce.

Once all the ingredients are combined and the sauce begins to boil, reduce the heat to medium and simmer for about 2-3 minutes to thicken. Stir occasionally to prevent the sauce from sticking to the bottom of the pot.

Now, let’s make the soft egg omelet. Lightly grease a non-stick pan with cooking oil. Pour the whisked egg mixture evenly over the pan.

As the bottom layer of the egg begins to set, gently stir the egg with chopsticks or a spatula to create soft curds. Cooking over medium-low heat is best to prevent the eggs from becoming tough.

When the egg is about 80% cooked, carefully scoop half of the prepared fried rice onto one side of the omelet.

Fold the other half of the egg over the rice to form the omurice shape. Remember that 2 eggs are suitable for 1 bowl of rice. If you’re making more, prepare additional egg mixture beforehand.

Generously ladle the warm, spicy sauce over the completed omurice. Instead of mixing everything together, we recommend cutting into the omelet with chopsticks or a spoon and scooping up bites of rice, egg, and sauce.
