Mala Sauce Ingredients

  • 1 Tbsp Mala sauce (can use Mala Tang or Mala Xiang Guo sauce)
  • 2 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Soy sauce
  • 2 Tbsp Sugar
  • 1 Tbsp Water
  • A pinch of black pepper

Optional Garnish

  • 1 stalk of scallion (for garnish)

First, let’s prepare all the ingredients. The store-bought mala sauce is easily found in most supermarkets, and you can use the same sauces you’d use for Mala Tang or Mala Xiang Guo. This sauce is the key to our delicious mala fish cakes!

Now, let’s prepare the square fish cakes for skewering. Fold each fish cake in half lengthwise, then fold it in half again in the opposite direction. This creates a neat, three-layered piece that’s perfect for skewers.

It’s time to skewer the fish cakes! Carefully thread the folded fish cakes onto the skewers in a zigzag pattern, alternating the direction of the folds. Make sure to push them on firmly to keep the shape intact.

For the garnish, finely chop the scallion. Wash the scallion thoroughly before chopping. The fresh aroma of the scallion will beautifully complement the spicy mala flavor.

Now for the star of the show: the mala sauce! In a bowl, combine 1 Tbsp of mala sauce, 2 Tbsp of gochujang, 2 Tbsp of soy sauce, 2 Tbsp of sugar, 1 Tbsp of water, and a pinch of black pepper. Stir everything together until well combined. If the sauce seems too thick, you can add a tiny bit more water. Wow! Doesn’t it smell amazing already? You’re almost done! ^.^;

In a wide pot, add enough water to cover the fish cakes and bring it to a boil over high heat. Once the water is boiling vigorously, carefully add the skewered fish cakes. Let them simmer for about 5 minutes. Be careful not to overcook them, as they might become too soft or mushy. Keep an eye on the time!

Once the fish cakes have simmered, carefully remove them from the boiling water. While they are still hot, generously brush them on both sides with the prepared mala sauce. Use a spoon or a brush to ensure an even coating. The sauce needs to soak in well to achieve the best flavor.
