Main Ingredients
  • 2 packs store-bought beef bone broth (approx. 1000ml)
  • 2-3 king oyster mushrooms
  • 1 handful fresh chives (about the size of a 100-won coin)

Cooking Instructions

Step 1

Pour the 2 packs of store-bought beef bone broth into a pot and bring to a boil over high heat. The total broth volume is about 1000ml.

Step 2

Slice the king oyster mushrooms into bite-sized pieces, about 0.5cm thick. Wash the chives, drain them well, and then cut them into lengths of about 3-4cm. One handful of chives is sufficient.

Step 3

Once the beef bone broth is boiling vigorously, add the sliced king oyster mushrooms. Continue to boil for another 2-3 minutes until the mushrooms are tender.

Step 4

When the soup comes to a boil again, add all the prepared seasoning ingredients: 1/2 tsp anchovy sauce, 1/2 tsp minced garlic, 1 tsp gochugaru, and 2 tsp perilla powder. Stir well to combine. You can adjust the amount of gochugaru to your preference for spicier or milder flavor.

Step 5

Finally, add the cut chives and let it boil for just a moment longer. Chives can become mushy if overcooked, so boiling them on high heat for only 30 seconds to 1 minute will preserve their crisp texture and fresh flavor. Enjoy this delicious soup with a warm bowl of rice!
