Main Ingredients

  • 1 pack The Bibigo Root Vegetable Porridge
  • 2 servings Kalguksu noodles
  • 1 handful fresh minari (water parsley) (approx. 7 stalks)
  • 300g oyster mushrooms (torn or sliced for easy eating)
  • 1 fresh egg (for garnish)
  • 1.5 cups water (300ml)

Spicy Broth Seasoning
  • 1 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp guk-ganjang (Korean soup soy sauce)
  • 1 Tbsp minced garlic
  • Pinch of black pepper

Dipping Mustard Sauce
  • 1 Tbsp jin-ganjang (regular soy sauce)
  • 2 Tbsp water
  • 1 tsp mustard powder
  • 1 tsp oligosaccharide (or adjust sweetness)
  • 1/2 tsp vinegar

Cooking Instructions

Step 1

First, prepare all the ingredients for the dish. Wash the minari thoroughly and cut it into 7cm lengths. Remove the tough ends from the oyster mushrooms and tear or slice them into bite-sized pieces. Set aside the egg for garnish.

Step 2

In a deep bowl, place 1 pack of ‘The Bibigo Root Vegetable Porridge.’ Crack 1 fresh egg on top, then artfully arrange the chopped minari (about 7 stalks) and the ginseng pieces that come with ‘The Bibigo Ginseng Galbi Tang’ as a garnish. This prepared porridge will be used later in the finishing step.

Step 3

In a wide, shallow pot suitable for hot pot, empty 2 packs of ‘The Bibigo Ginseng Galbi Tang.’ Add 1.5 cups (300ml) of water. Be mindful not to add too much water, as the galbi tang packs already contain a generous amount of broth.

Step 4

Add all the ‘Spicy Broth Seasoning’ ingredients – gochujang, gochugaru, guk-ganjang, minced garlic, and pepper – into the pot. Whisk well with a whisk or spoon until the seasonings are smoothly dissolved into the broth, ensuring a rich and spicy flavor.

Step 5

Arrange the sliced minari and the prepared oyster mushrooms generously over the seasoned broth. The mushrooms will wilt as they cook, so feel free to add plenty.

Step 6

Place the pot on the stove over medium heat and bring to a boil. Once boiling, first remove the short ribs and the tender, cooked minari and mushrooms. In a small bowl, combine the ingredients for the dipping mustard sauce (jin-ganjang, water, mustard powder, oligosaccharide, vinegar) and mix well. Dip the removed meats and vegetables into the mustard sauce for an enhanced flavor.

Step 7

After enjoying the initial meats and vegetables, and once the broth has reduced slightly, add the 2 servings of kalguksu noodles to the pot. Gently loosen the noodles so they don’t stick together, and ladle some broth over them as they cook.

Step 8

Once the kalguksu noodles are cooked to your liking, it’s time to enjoy the warm and delicious noodle soup. Slurp them up and savor the taste!

Step 9

The perfect ending to a wonderful meal is, of course, porridge! After finishing the noodles, leave about one ladleful of broth in the pot. Add the prepared ‘The Bibigo Root Vegetable Porridge’ to this remaining broth. Stir continuously with a spatula or spoon, scraping the bottom to prevent sticking, until it thickens into a smooth porridge. Adjust the consistency by adding a little more broth if needed.
