Ingredients

  • 1/2 Korean zucchini (aehobak)
  • 150g Enoki mushrooms
  • 150g Oyster mushrooms (neutarri beoseot)
  • 1 King oyster mushroom (saesongi beoseot)
  • 1/2 Scallion (daepa)
  • 1 Korean green chili pepper (cheongyang gochu)
  • 1 Red chili pepper (hong gochu)

Stew Seasoning

  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 0.5 Tbsp Doenjang (Korean soybean paste)
  • A pinch of salt
  • 1 Liter water

Cooking Instructions

Step 1

In a pot, pour 1 liter of water. Dissolve 1.5 tablespoons of Gochujang and 0.5 tablespoons of Doenjang in the water. Bring the mixture to a boil over medium heat, then reduce the heat slightly.

Prepare the vegetables and mushrooms. Slice the 1/2 Korean zucchini and 1 king oyster mushroom into half-moon shapes. Thinly slice the 1/2 scallion diagonally. Thinly slice the 1 Korean green chili pepper and 1 red chili pepper diagonally. Trim the roots of the enoki mushrooms and separate them into smaller clusters. Tear the oyster mushrooms into bite-sized pieces.

Once the broth comes to a rolling boil, add the sliced king oyster mushrooms and the torn oyster mushrooms. Let them simmer for about 3-4 minutes to release their savory flavors into the broth.

When the king oyster mushrooms and oyster mushrooms are partially cooked, add the Korean zucchini and enoki mushrooms. Continue to simmer until the zucchini is tender.

Add the sliced scallions, Korean green chili peppers, and red chili peppers to the stew. Cook for another 1-2 minutes until the aromatics are fragrant.

Taste the stew and adjust the seasoning with a pinch of salt if needed. Let the stew simmer gently over medium-low heat for about 10 minutes to allow the flavors to meld beautifully. Serve hot and enjoy this comforting Korean stew.
