Essential Ingredients for a Flavorful Stew- 200g Pork Shoulder (for stew)
- 1 pack King Oyster Mushrooms (approx. 150g)
- 1 medium Potato
- 1/3 Zucchini
- 1/2 Green Onion
- 1 Korean Green Chili Pepper (adjust for spiciness)
- 3 Tbsp Sesame Oil
- 1 tsp Sugar
- 600ml Water (3 cups)
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy Sauce for Soup (for seasoning)
- 1 Tbsp Salted Shrimp (for umami)
Pork Marinating Ingredients- 1 Tbsp Mirin (or Rice Wine)
- Pinch of Black Pepper
- 1 Tbsp Mirin (or Rice Wine)
- Pinch of Black Pepper
Cooking Instructions
Step 1
Begin by patting the pork dry with paper towels to remove any excess blood. This ensures a clean flavor without any gamey taste. Marinate the pork with 1 Tbsp of mirin and a pinch of black pepper, mixing well. This step will make the pork more tender.

Now, let’s prepare the vegetables. Peel the potato and cut it into bite-sized cubes. Slice the zucchini similarly. Chop the green onion diagonally. For the king oyster mushrooms, gently tear the caps into bite-sized pieces or trim the ends and separate the stems into strands. Finely chop the Korean green chili pepper to add a touch of heat.

Heat a pot over medium-low heat. Add 3 Tbsp of sesame oil and sauté the chopped green onions until their aroma is fully released. Properly rendered green onion oil adds a deeper flavor to the stew.

Once the green onion is fragrant, add the marinated pork and stir-fry over medium heat until the pork is about halfway cooked. Sprinkle 1 tsp of sugar over the pork; this enhances the umami and balances the earthiness of the gochujang.

When the pork is almost cooked through, add 2 Tbsp of gochujang directly to the pot. Reduce the heat to medium-low and stir-fry thoroughly, being careful not to burn it. Stir-frying the gochujang first removes any raw taste and brings out its savory depth.

Next, add 2 Tbsp of gochugaru (chili flakes) and stir-fry briefly with the gochujang. This combination of spicy gochujang and fiery gochugaru creates a rich and delicious stew.

Pour in 600ml (3 cups) of water and bring it to a boil. Once boiling, season the stew with 1 Tbsp of soy sauce for soup and 1 Tbsp of salted shrimp. Salted shrimp adds a wonderful depth of flavor, making the stew much tastier.

Add the cubed potatoes, zucchini, and the prepared king oyster mushrooms to the pot. Let it simmer vigorously until the vegetables are tender and the mushrooms have infused their refreshing flavor into the broth.

Finally, add the chopped Korean green chili pepper and simmer for another moment to complete the spicy and refreshing flavor. Feel free to add more chilies if you prefer it spicier.
