Main Ingredients

  • 200g Pork neck (or other cuts)
  • 300g Well-fermented Kimchi
  • 1/2 Onion
  • 1/2 stalk Green Onion
  • 1 block Tofu
  • 1 handful Mushrooms (e.g., shiitake, oyster, king oyster)
  • 1 liter Water (or broth)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

Lightly grease the bottom of a pot with cooking oil. Add thinly sliced onion and green onion (cut diagonally) and sauté over medium-low heat until fragrant. Once the onions and green onions have softened, add the pork, cut into bite-sized pieces, and a pinch of black pepper. Sauté together. You can use any cut of pork, not just neck. Be careful not to cook over high heat, as it can burn easily. Cook until the pork is lightly browned.

Once the pork is partially cooked, add the chopped kimchi and stir-fry together. Instead of just simmering, thoroughly stir-frying the kimchi develops a deeper flavor in this recipe. Continue to stir-fry until the kimchi becomes tender. Then, add 2 tablespoons of gochugaru and mix well with the kimchi and pork. (If you prefer less spicy food, you can reduce the amount of gochugaru or use it mainly for color.)

When the kimchi is softened from stir-frying, pour in 1 liter of water (or dashi, anchovy broth, etc.) and bring to a boil. You can adjust the amount of water to your preference. Once boiling, add the mushrooms and cubed tofu. Let it simmer like a kimchi stew. Taste the broth and adjust the seasoning with soy sauce, fish sauce, or salt as needed.

Boil the udon noodles according to package directions until just tender. Place the cooked udon noodles in a serving bowl and ladle the hot, spicy kimchi broth generously over them.
