  • 2 cans (approx. 150g each) canned saury
  • 1 head aged kimchi (approx. 500g, including kimchi juice)

Prepare the aged kimchi by tearing it into manageable pieces (about 5-7cm). Tearing instead of cutting helps the flavors meld better and results in a more tender texture. Set aside the kimchi juice.

Drain the canned saury, removing excess oil. Save the liquid from the can, as it adds a deep umami flavor to the stew.

In a pot or deep pan, spread the torn kimchi at the bottom. If your kimchi is very sour or salty, add 2 tablespoons of sugar to balance the flavors. Add 2 tablespoons of cooking wine (mirin) to reduce any fishy odor and enhance the aroma.

Arrange the canned saury on top of the kimchi. Pour in the reserved saury can liquid and all the kimchi juice. Add 500ml of water. The liquid should generously cover the ingredients.

Cover the pot and simmer over medium heat for about 20 minutes, allowing the kimchi and saury to soften and the flavors to meld. After 20 minutes, uncover the pot, reduce the heat to medium-low, and continue to cook for another 5 minutes, basting the ingredients with the broth. This concentrates the flavors.
