Spicy Kimchi Ramen Porridge

Feeling like ramen is a bit lacking on its own, but a full bowl of soup with rice is too much? We recommend this warm and satisfying Kimchi Ramen Porridge, packed with delicious ingredients! It’s a perfect way to enjoy ramen in a more substantial and flavorful way.
Ingredients- 1/2 packet ramen (including seasoning)
- 1/2 bowl cooked rice (cold rice works well too)
- 350ml water
- 2-3 Tbsp finely chopped kimchi (well-fermented is best)
- 1 egg
- A small amount of tteokguk tteok (rice cake slices) (optional, adds chewiness)
- A sprinkle of roasted seaweed flakes (for garnish)
Cooking Instructions
Step 1
First, prepare all the necessary ingredients for your dish. Break the ramen noodles in half since you’ll only be using half a packet. Have your cooked rice, chopped kimchi, rice cake slices, and egg ready.
Step 2
Pour 350ml of water into a pot and bring it to a boil over high heat. Once the water is rapidly boiling, add half of the ramen seasoning packet and the chopped kimchi. This will create a flavorful and spicy base for your porridge.
Step 3
Add the 1/2 bowl of cooked rice to the pot. Gently stir to separate the rice grains so they don’t clump together. The rice will absorb the broth, helping to thicken the porridge. Let this simmer for about 2 minutes until the rice softens.
Step 4
Now, add the 1/2 portion of ramen noodles and the tteokguk tteok (rice cake slices). Continue to cook for another 4 minutes. You want the noodles to be cooked through and the rice cakes to be soft and chewy. Be mindful of the cooking time to prevent the noodles from becoming too soggy.
Step 5
This is the final cooking step. Crack the egg into a separate bowl and lightly beat it. Then, slowly drizzle the beaten egg into the simmering ramen porridge while gently stirring. If you prefer cooked egg ribbons, you can swirl it in. Alternatively, if you like your egg cooked as a sheet, you can simply let it cook without stirring.
Step 6
Turn off the heat and carefully transfer the ramen porridge to a serving bowl. For an extra touch of flavor and texture, sprinkle generously with roasted seaweed flakes. Be careful, it’s hot! Enjoy your delicious and comforting meal.
