  • 2 servings of Kalguksu noodles (Using Dao-Sok noodles will provide a uniquely chewy texture!)
  • 3-4 leaves of well-fermented Napa cabbage kimchi (The more mature the kimchi, the deeper the broth flavor)
  • 1/2 ladle of kimchi brine (Adds zestiness and umami)
  • 1/2 stalk of green onion, finely chopped
  • 1 Tbsp minced garlic

First, prepare the Kalguksu noodles. Using thicker Dao-Sok noodles, as opposed to standard Kalguksu noodles, will give you a wonderful chewy bite. Gently separate the noodles strand by strand and shake off any excess flour.

Bring a generous amount of water to a rolling boil in a large pot. Once boiling, add the prepared Kalguksu noodles. Cook them until they are about 70% done; they shouldn’t be fully cooked, as they will continue to cook in the broth. This step ensures they maintain a pleasant texture without becoming mushy.

Drain the noodles and rinse them under cold running water. This prevents them from sticking together and helps maintain their firm, chewy texture. Lightly drain any excess water before setting aside.

Now, let’s create the flavorful broth. In another pot, bring your preferred broth (like anchovy or kelp broth) to a rolling boil. Add the finely chopped kimchi and the kimchi brine. Let it simmer vigorously until the kimchi softens and the broth becomes rich and spicy.
