Ingredients

  • 200g Udon noodles
  • 600ml Anchovy broth
  • 100g Aged kimchi
  • 3 sheets Square fish cakes
  • 3 Tbsp Kimchi brine
  • 1 Tbsp Fish sauce
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy sauce for soup (Gukganjang)
  • 1/2 Tbsp Minced garlic
  • 1/2 stalk Green onion
  • Pinch of Black pepper

Cooking Instructions

Step 1

First, prepare the udon noodles. Dip 200g of udon noodles in boiling water for about 2 minutes to pre-cook them. This pre-cooking step helps prevent the noodles from becoming too mushy when you add them to the broth later, ensuring a chewier texture.

Prepare 600ml of warm anchovy broth. If you are using concentrated broth cubes, they often contain seasoning, so you might not need to add extra salt. If using regular broth, taste and adjust with salt if necessary.

Add 100g of finely chopped aged kimchi to the prepared broth. The amount of kimchi can be adjusted according to your preference for spiciness and tanginess.

To achieve a flavorful and spicy broth, add 3 tablespoons of kimchi brine, 1 tablespoon of fish sauce for umami, 1 tablespoon of soup soy sauce for depth, and 1 tablespoon of gochugaru. Bring the mixture to a rolling boil.

Cut 3 sheets of square fish cakes into bite-sized pieces (triangles or strips) and add them to the boiling broth.

Immediately add the pre-cooked udon noodles to the pot. Udon noodles can break easily if overcooked, so let them sit in the broth for about 1 minute without stirring to allow them to absorb heat. After a minute, gently separate the noodles with chopsticks and cook for another 2 minutes. Avoid overcooking to maintain their chewy texture.

Stir in 1/2 tablespoon of minced garlic. The pungent aroma of garlic will enhance the overall flavor of the soup.

Finally, add 1/2 a stalk of green onion, sliced diagonally, and simmer briefly. If you prefer an extra kick of spice, feel free to add a finely chopped red chili pepper at this stage.
