Cooking Instructions
Step 1
Today, we’re making Jang-Kalguksu for two servings, using a convenient store-bought anchovy kalguksu ramen. It’s surprisingly easy!
Step 2
First, let’s make the seasoning paste, the heart of delicious Jang-Kalguksu. In a bowl, combine 1 Tbsp doenjang, 2 Tbsp gochujang, 2 Tbsp gochugaru, and 1 Tbsp minced garlic. Mix them thoroughly. If the paste is too thick, you can add a tiny bit of water to adjust the consistency.
Step 3
Pour 1 liter of fresh water into a pot and bring it to a boil over high heat. This will form the base of our savory broth.
Step 4
While the water is boiling, let’s prepare the vegetables for the Jang-Kalguksu. Slice the zucchini into thin half-moon shapes. Finely chop the chili pepper. Slice the green onion diagonally for a nice presentation and flavor. Thinly slice the onion as well.
Step 5
Once the water is boiling, add the dried vegetable flakes from the anchovy kalguksu ramen, the prepared seasoning paste, and the noodles. Now, let it simmer for 5 minutes until the noodles are perfectly cooked. It’s a good idea to gently stir occasionally to prevent the noodles from sticking together.
Step 6
When the noodles are almost done, add the prepared zucchini, onion, and chili pepper to the pot. Let it simmer for another 2-3 minutes, just enough to cook the vegetables without them becoming too soft.
Step 7
When all the ingredients have melded together and a wonderful aroma fills the air, your Jang-Kalguksu is ready! Enjoy it while it’s hot. For an extra touch, you can crack an egg into the broth or sprinkle some roasted seaweed flakes on top.
