  • Red chili pepper: 1 (seeds removed)
  • Cheongyang chili pepper: 2 (seeds removed)
  • Cooking oil: a little (for the pan)

Spicy Marinade

  • Soy sauce: 4 Tbsp
  • Sugar: 1 Tbsp (adjust to taste)
  • Plum extract: 1 Tbsp (enhances flavor)
  • Mirin (cooking wine): 2 Tbsp (removes gamey odor)
  • Minced garlic: 2 Tbsp (rich flavor)
  • Fish sauce or anchovy sauce: 1 tsp (adds umami)
  • Sesame oil: 1 Tbsp (nutty aroma)
  • Black pepper: a pinch (to taste)

Cooking Instructions

Step 1

First, prepare the chili peppers for the spicy kick. Wash the red chili pepper and two Cheongyang chili peppers, remove their stems, scrape out the seeds, and finely mince them. To create a rich and flavorful marinade, combine 4 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp plum extract, 2 Tbsp mirin, 2 Tbsp minced garlic, 1 tsp fish sauce, 1 Tbsp sesame oil, and a pinch of black pepper in a bowl. Mix them well until you have a smooth marinade. You can adjust the sugar amount according to your preference.

Now, let’s prepare the pork. Take 400g of thinly sliced pork. Pour the prepared marinade over the pork, and add the minced red and Cheongyang chili peppers. Gently mix everything together with your hands, ensuring the pork is evenly coated. Let it marinate for about 10 minutes to allow the flavors to meld beautifully. The marinating time can be adjusted based on the thickness of the pork and the saltiness of the marinade.

Heat a frying pan over medium heat and lightly coat it with cooking oil. Place the marinated pork slices into the pan, ensuring they are in a single layer and not overlapping. Cooking over medium heat rather than high heat will prevent the pork from burning and ensure it cooks through evenly and stays juicy. Grill the pork, flipping it occasionally, until it’s nicely browned and cooked through on both sides. It’s important to make sure the pork is fully cooked.
