Main Ingredients
  • 1 block Firm Tofu (cut into bite-sized pieces)
  • 1/2 Zucchini (sliced into half-moons)
  • 2 King Oyster Mushrooms (sliced into bite-sized pieces)
  • 1 handful Oyster Mushrooms (separated or torn into pieces)
  • 1 Korean Green Chili Pepper (for spiciness, thinly sliced diagonally)
  • 1 Red Chili Pepper (for color, thinly sliced diagonally)
  • 1/2 Scallion (sliced diagonally)

Cooking Instructions

Step 1

Prepare all vegetables and tofu by slicing them as indicated. Cut the tofu into substantial pieces so it doesn’t break apart easily. Slice the zucchini into half-moons and the king oyster mushrooms into bite-sized pieces. Slice the scallions and chili peppers diagonally. For the oyster mushrooms, gently tear them apart to help them absorb the flavors better.

Step 2

Pour 1 liter of water into a deep pot. Dissolve the gochujang and doenjang completely in the water, ensuring there are no lumps for a smooth stew. Bring this mixture to a simmer over medium heat.

Step 3

Once the broth begins to boil, add the king oyster mushrooms and the torn oyster mushrooms first. These mushrooms have a firmer texture and benefit from a slightly longer cooking time, releasing their savory flavors into the stew.

Step 4

As the mushrooms cook, stir in the minced garlic and the sliced zucchini. Simmering over high heat at this stage will help the zucchini retain a pleasant crispness and bring out its natural sweetness.

Step 5

Now, gently add the tofu pieces to the pot along with 1 teaspoon of salt. Tofu is best added towards the end of cooking to prevent it from crumbling. Add salt now to start seasoning the stew.

Step 6

Finally, add the diagonally sliced scallions, red chili pepper, and Korean green chili pepper. Let the stew simmer for a few more minutes. The aroma from the chilies will infuse the stew, enhancing its overall taste.

Step 7

Finish by sprinkling a pinch of black pepper for added aroma. Taste the stew and adjust the seasoning with more salt if needed. Your delicious and spicy Gochujang stew is ready to be served!
