  • 600ml anchovy and kelp broth (or rice water)

Let’s get started on making a deliciously refreshing and spicy squid and radish soup. It’s perfect for warming you up on a chilly day.

First, prepare the squid. Peel the skin, remove the innards, and rinse thoroughly under running water. Score the body of the squid with a knife in a crosshatch pattern; this helps the seasoning penetrate better and makes the texture more tender. Cut into bite-sized pieces. Peel the Korean radish and slice it thinly (like a fan) or into bite-sized cubes.

Pour 600ml of the anchovy and kelp broth into a pot. (Plain water or rice water also works well.) Once the broth begins to boil, add 1 Tbsp of soy sauce for soup, 1 tsp of minced garlic, 2 tsp of red pepper flakes, and 2 tsp of gochujang. Stir well to dissolve the seasonings and create a flavorful soup base.

Since radish takes a little longer to cook, add it to the seasoned broth first. Cover the pot and simmer over medium heat for about 5-7 minutes, or until the radish becomes translucent and tender.

Once the radish is partially cooked, add the prepared squid. Be careful not to overcook the squid, as it can become tough. It’s best to add it towards the end of the cooking process, after the radish is nearly done.

When the squid turns opaque and is cooked through (this usually takes about 2-3 minutes), it’s almost ready. At this point, add the diagonally sliced green onions and let it simmer for another moment. Finally, adjust the seasoning with salt to achieve the perfect spicy and refreshing taste.
