I’ve made a potato soup with a spicy and refreshing kick using gochujang. The fluffy potatoes make this recipe even more delicious. It’s a hearty and warming soup perfect for a gloomy day.

Soup Base

  • 1L Water
  • 1 Soup Stock Pack

Cooking Instructions

Step 1

Pour 1L of water into a pot and add 1 soup stock pack. Simmer over medium heat for about 15 minutes to extract the broth. Remove the stock pack once the broth is ready.

Peel the skin off 3-4 potatoes and wash them thoroughly under running water. Slice the potatoes into half-moon shapes or bite-sized pieces, about 0.7cm thick. Larger pieces will provide a more satisfying chew.

Peel and wash the onion. Slice it into thin strips or dice it into bite-sized pieces. Cutting the onion to a similar size as the potatoes will ensure they cook evenly.

Once the prepared broth is boiling, add the sliced potatoes. Let them simmer over medium heat until they become tender.

When the potatoes are partially cooked, stir in 1 Tbsp of gochujang, 4 Tbsp of soy sauce, and 1 Tbsp of minced garlic. The soy sauce and garlic add umami, while the gochujang provides the spicy flavor. Continue to cook until the potatoes are soft.

When the potatoes are about halfway cooked, add the sliced onion. The onion will add sweetness and a refreshing taste to the soup, and it will turn translucent as it cooks, making the soup visually appealing. Cook until the onion is softened.

Finally, add 0.5 Tbsp of chicken stock to further enhance the savory flavor. If you don’t have chicken stock, you can omit it or use a small amount of natural seasonings like fish sauce or salted shrimp paste instead of commercial seasonings.

Once the onion is tender, add the chopped scallions. Simmer for just a moment longer to infuse the soup with the fresh aroma of the scallions. Be careful not to overcook, as this can make the scallions mushy.
