How to Make Delicious Gochujang Braised Potatoes, a Perfect Side Dish
Introducing Gochujang Braised Potatoes, where tender, fluffy potatoes create a fantastic harmony with rice. Made with simple ingredients, this dish is a magical side that will have you finishing your rice bowl in no time. You can also omit the gochujang and braise them with soy sauce for the kids!
Main Ingredients- 2 medium potatoes
- 1/2 onion
- 1/2 stalk green onion
- Cooking oil, as needed
Cooking Instructions
Step 1
First, wash and prepare 2 potatoes and 1/2 onion.

Peel the potatoes and cut them into roughly 2cm cubes. It’s important to keep them a decent size, as they can shrink and break apart during cooking if cut too small.

Slice the onion to a similar thickness as the potatoes.

While the potatoes are cooking, let’s make the delicious sauce. In a small bowl, add 1 Tbsp of gochujang.

Add 1 Tbsp of minced garlic for a spicy kick.

Add 2.5 Tbsp of soy sauce, the base for umami flavor.

Gently pat dry any excess water from the prepared potatoes with a paper towel, then add them to the hot pan. Stir-fry until the edges start to turn lightly golden. This helps the potatoes absorb the sauce better.

Once the potato edges begin to look slightly translucent, add the sliced onion and stir-fry together. The sweetness of the onion will blend well with the potatoes.

Pour in about 100ml of water. This helps the ingredients cook and become tender.

Add 1 Tbsp of sugar for sweetness and gently stir to combine with all the ingredients and sauce.

When the potatoes are almost cooked and the onions are translucent, add all the pre-mixed gochujang sauce. Stir well to coat the ingredients evenly with the sauce.
