- 1 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp sugar
- 1 piece butter (about 10g)
- 1/2 Tbsp sesame oil
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, drain the oil from the canned tuna and set it aside. Thinly slice 5 cloves of garlic and mince the remaining 2 cloves. Thinly slice the green onion. Preparing the ingredients beforehand will allow for a smoother cooking process without any interruptions.
Step 2
Heat a generous amount of cooking oil in a frying pan over low heat. Add the sliced garlic and slowly sauté it. Gently cooking the garlic without burning will bring out its natural nutty flavor.
Step 3
Once the garlic becomes fragrant, add the minced garlic and sliced green onions to the pan. Stir-fry them together. The subtle sweetness of the green onions and the pungency of the garlic will create a delicious aroma.
Step 4
As the garlic turns golden brown, a wonderful aroma will fill your kitchen. Continue to stir-fry over low heat, being careful not to burn it. Thoroughly sautéing the garlic will deepen the overall flavor of the fried rice.
Step 5
Temporarily turn off the heat and add the cooked rice to the pan. Using a spatula, gently break up the rice clumps and mix them evenly with the sautéed garlic and green onions. It’s important to ensure the rice is not clumped together.
Step 6
Now it’s time to add the seasonings. Add the drained tuna, 1 tablespoon of gochujang, 1 tablespoon of soy sauce, 1 tablespoon of sugar, and 1 tablespoon of gochugaru. Once all ingredients are added, switch the heat back to low. Use the spatula to mix and fry the rice and seasonings together as if you are ‘mashing’ them.
Step 7
Once the rice and seasonings are somewhat combined, add the piece of butter to the edge of the pan to melt. As the butter melts, incorporate it into the rice, stirring and frying evenly. The butter will add a rich, savory, and smooth flavor. If you desire a stronger butter taste, feel free to add more butter.
Step 8
Continue to stir-fry diligently until the rice grains become firm and chewy. Just before turning off the heat, drizzle in half a tablespoon of sesame oil and sprinkle with sesame seeds to finish. Enjoy this amazing fried rice where the chewy rice, spicy and savory tuna, and fragrant garlic come together harmoniously!
